Cabernet Sauvignon DOC Venezia

Grape Variety: Cabernet Sauvignon

Alcohol Content: 12.5%

Vinification: After crushing of grapes, juice remains in Contact with the skins which is maceration for 6-7 days to allow the extraction of color . After completion of malolactic fermentation, the wine is then stored in stainless steel tanks and will finish with 2-3 months ageing before release.

Tasting Characteristics: Ruby red in color . Delicate bouquet with scent of fresh cut wildberry. It is full and rich with overtones and well rounded with a pleasantly long lingering finish.

Pinot Nero DOC Venezia

Grape Variety: Pinot Nero

Alcohol Content: 12%

Vinification: The grapes are vinified with great care in order to express the characteristics of the area to the full. After the malolactic fermentation it is aged for six months, thus attaining greater harmony and complexity.

Tasting Characteristics: Deep Ruby-red color with typical violet and morel bouquet. A full-bodied wine with perceptible tannin.

Prosecco DOC Extra Dry

Grape Variety: Glera

Alcohol Content: 11%

Vinification: The grapes that make up this wine are freshly picked and undergoe a slight pressing. The vinification is carried out at low temperatures to ensure a significant extraction of varietal aromas that exalt the bouquet, as well as fruity and tangy flavor utilizing the charmat method.

Tasting Characteristics: Wine of refined elegance, color is pale straw yellow, fine, persistent perlage, fruity, elegant and characteristic bouquet and taste.

Sauvignon Blanc DOC Venezia

Amarone della Valpolicella

Grape Variety:  Corvina, Rondinella & Molinara

Alcohol Content: 15%

Vinification: Harmonious, elegant and complex, Amarone della Valpolicella Doc Monte Zovo is the result of the long and accurate productive protocol, invented more than 20 years ago by the Cottini Family. The expert pickers proceed to a double selection of Corvina, Rondinella and Molinara grapes which compose this wine. The first selection take place on the vines, the second one inside the cases. In this way the grapes are guaranteed healthy for drying, characteristic that is essential to born an Amarone of major quality. Upon this grapes, more than 500 controls are realized, in order to reach the perfect grapes grade of concentration, before squeezing. Twenty-four months of ageing, in French oak barrels, complete the production process of this wine.

Tasting Characteristics: Flavors are complex and bear in mind raisin, fruit in alcohol. The carefully calculated alcohol balance guarantees a characteristic mouthfeel from the very first sip.

Ripasso della Valpolicella Doc Superiore

Grape Variety: Corvina, Rondinella & Molinara

Alcohol Content: 14.5%

Vinification: Elegant, vigorous and persistent, Monte Zovo's Ripasso della Valpolicella Doc Superiore is the result of the long and accurate productive protocol, invented more than 20 years ago by the Cottini Family. The basis of this process is the careful selection of grapes in the vineyards which are property of the Cottini Family, where only the finest bunches are picked and crushed in the month of September in order to produce a Valpolicella Doc Superiore that stands head and shoulders above the others. Mr. Diego Cottini, winemaker at Monte Zovo then set in motion a particular process that turns this wine into a sophisticated Ripasso, by pouring it onto the skins of the Amarone in January and leaving them together for twenty days.

Tasting Characteristics: Distinctive aromas of dried fruit, ripe fruit and jam that will add body and character.
